We’re delighted to present our eighth batch of single casks specially selected for the UK, each demonstrating the unique interaction of the wood, spirit, and subsequent flavour extension.
Famed for his Sherry cask maturation expertise, Billy Walker selected this exceptional Pedro Ximénez hogshead (2009, #804970) to be bottled. The smaller size of this cask has injected an intense depth of both colour and flavour to our honeyed spirit, offering up a palate abundant with dark chocolate shavings, rich butterscotch and hints of sweet spices. The resulting malt delivers a sophisticated drinking experience with a velvety texture, making for a truly indulgent expression.
Bottled at 57.7%, unchillfiltered and natural colour, this expression is available exclusively in the UK.

Taste Profile
Notes of baking spices, chocolate and heather honey, with citrus, ginger and truffle oil.
Bursting with chocolate buttercream, plum jam and treacle, followed by crystalised ginger, bananas and cinnamon, with caramel on the finish.
